Dr. Ayesha Begum is a distinguished Professor and an enthusiastic researcher in the field of Nutrition and Food Science. She currently serves in the Department of Applied Food Science and Nutrition under the Faculty of Food Science and Technology at Chattogram Veterinary and Animal Sciences University (CVASU). Dr. Begum holds a B.Sc. and M.Sc. in Nutrition and Food Science from the University of Dhaka and earned her Ph.D. in Ecology from Yunnan University, China, through the prestigious China Government Scholarship (CSC).

Beyond her formal education, Dr. Begum received several notable scholarships and honors, including the Primary and Junior Level Scholarship and the Higher Secondary Board (H.S.C.) Scholarship for outstanding academic results. She also achieved first-class honors in both her graduation and post-graduation. She has gained extensive professional experience and training in Public Health, which was conducted by JiVitA (a research project of Johns Hopkins University, USA), and Qualitative Research Methodology, which she completed at the International Centre for Diarrhoeal Disease Research, Bangladesh (ICDDR,B). Additionally, she completed a three-month professional internship at ICDDR,B, and a week-long training on Participatory Reflection and Action (PRA) in Sri Lanka, which focused on project proposal guidelines and report writing.

As an academician and mentor, Dr. Begum is deeply committed to both teaching and research. She supervises Master's and undergraduate students, guiding their research in food safety, quality, and public health nutrition. Her research, which has been published in numerous peer-reviewed journals and presented at international conferences, aims to improve public health nutrition by assessing the nutritional status of communities, implementing dietary modifications, and applying targeted nutritional interventions. Her work also involves developing safe and innovative food products to combat malnutrition and assessing food quality and safety.

Dr. Begum has led and co-led numerous research projects supported by the University Grants Commission of Bangladesh (UGC) and the Ministry of Science and Technology of Bangladesh. Her projects have focused on a range of critical issues, such as assessing the effects of ripening agents on the nutritional value of fruits and vegetables, analyzing heavy metal contamination in food samples, and investigating the molecular mechanisms of heavy metal-induced toxicity of food quality deterioration using Next-Generation Sequencing (NGS).

The abstract titled "Impact of Cadmium-Induced Toxicity on Labeo rohita's Health: Assessing through Morpho-behavioral, Histopathological, and Molecular Responses" has been accepted for oral presentation at the upcoming Food Sustainability and Security: An International Conference (FUSE 2025). The conference will be held at the University of Malaysia Terengganu (UMT) from September 22–24, 2025.
